Sesame Oil Chicken Soup
麻油雞

This is the grandmama of Taiwanese postpartum soups. Chances are if you are Taiwanese and just gave birth, you might be drinking this straight for 30 days post birth.

This soup is best eaten in the 3rd or 4th week as it is highly nutritious and helps the new mommy heal.

Ingredients
one silkie chicken
1/2 cup sesame oil
6-8 large pieces of ginger
10 cups water
5 cups rice wine

Prep: Cut the silkie chicken down to palm sized pieces.  If you have time, blanch the chicken pieces and rinse.


Directions

In a large pot, heat sesame oil on medium heat. Add ginger once sesame oil is fragrant and cook ginger until edges are golden brown.




Add chicken into the oil and cook until meat is white.



Add water and rice wine and bring to a boil for 10 minutes.  Lower the heat to simmer for 30 minutes uncovered so alcohol can burn off.
